The Culinary Lead will direct and oversee line level colleagues on culinary tasks and performances, check quality of finished food products, utilize proper knife skills, and will ensure efficient preparation methods and procedures. The Culinary Lead is expected to support the Sous Chef in the kitchen’s operation and should be capable of assuming the responsibility of the kitchen in the absence of the Sous Chef. The Culinary Lead will support in the supervision, training and development of the culinary team, and will also assist in the monitoring of payroll cost and overtime. The right person should be familiar and have a comprehensive understanding of a hotel kitchen operation. Additional requirements include receiving products from the storeroom, and utilizing the proper storage procedures per the Chef de Cuisines guidelines, preparing daily specials, and ensuring the proper amount for needed food preparation. Ideal candidate should have culinary knowledge and skills to be able to work in all kitchens, such as specialty restaurants, three-meal restaurants, banquets, saucier, butcher, and must have basic skills in the pastry shop. This position reports directly to the Sous Chef/Chef de Cuisine or Executive Sous Chef. The ideal candidates must be passionate & excited about food with a desire to pursue leadership roles in the culinary profession.

4 years of culinary experience
Pasrty experience preferred
Experience in a high volume restaurant required
Experience in banquet operations strongly desired
Possess higher awareness level of hotel business, handle and communicate business matter in a responsive manner, such as scheduling, planning, and preparing for efficient productivity
An eager attitude towards learning and support of the company culinary standards
Skills and knowledge include culinary education, basic cost control understanding, leadership skills, organizational skills and computer skills.
Previous supervisory experience preferred
Culinary degree or related hotel experience preferred.
Must be a team player and a dynamic leader
Ability to multi-task in a fast paced environment
Texas Food Handlers Certification
Flexibility to work any days of the week, including weekends and holidays
