Thompson Dallas, the Texas debut at The National, a 52 story building boasting a midcentury-modern hexagon design, rising prominently above the Dallas skyline. Designed to encompass an entire city block, Thompson Dallas will offer 219 guestrooms including 52 suites, 2 defining dining options and 20,000 sq feet of stunning event space. Restaurants at the Thompson Dallas are energetic, high energy, independent and exquisitely appointed spaces. The dining rooms are very reminiscent of the original design of our historic building while adding modern touches designed to ignite the senses of our guests. Our cuisine will be from scratch, globally inspired yet reminiscent and at times classic. Our cocktails will both be a nod to the classics while making a heavy nod to fresh innovative beverages to enjoy inside or on our pool deck.
The Director of Beverage will be responsible for all aspects of the beverage programming on property!!
Responsible for maintaining inventory and supplies as necessary to support operations, as well as communicating and coordinating with any and all operating departments.
Responsible for maintaining company equipment, identifying and enforcing the maintenance of company assets and equipment through handling and storage, working to reduce loss of company property.
Responsible for ensuring that all bar operations meet the regulatory Health Department standards for cleanliness and sanitation of work areas and equipment.
Establish and maintain quality wine, beer, and cocktail product and service levels while maximizing profits
Monitor budget and maintain high levels of internal and external guests' satisfaction.
Maintain beverage costs. Adapt to the ever-changing trends in the beverage world
Creation of new and exciting cocktails
Understanding of Local, regional, world wine & beer knowledge
Conduct monthly inventories to track monthly shortages and equipment needs.
Review cost increases communicate with vendors to review charges and apply strategies to lower costs when possible.
Analyzes and evaluates beverage department profits and loss statements and makes recommendations as to alternative courses of action.
Responsible for the ordering of all beverage product, produce, ingredients, and equipment as necessary to support all beverage operations
A pulse on current and future beverage programming trends locally and nationally.
-Previous experience with beverage programming from inception to execution
-Vendor relations with activations and collaborating
-Boutique/Lifestyle/Nightlife beverage experience preferred
-this position is in charge of curating the beverage program for the hotel, and is less of a floor manager
