Hyatt Restaurant Manager - Night Hawk in KANSAS CITY, Missouri

Located in the Library District of downtown Kansas City, the Hotel Kansas City is located in the historic location of the Kansas City Club. Founded in 1882, the club was one of two surviving private city clubs on the Missouri side of Kansas City until it closed in 2015.

The Hotel Kansas City will bring back the exclusive feeling of the building's past, combined with the warm welcome of your favorite watering hole. In addition to the hotel's 144 guest rooms are The Town Company, a three-meal restaurant; Night Hawk, a live music cellar cocktail bar; and a lobby lounge and bar that will bring locals and guests together for impromptu mingling. For the event minded guests, there will be 20,000 feet of meeting space that includes impressive historic ballrooms and a 3,000 square foot rooftop event patio.

Job Overview

This position is responsible for directing and organizing the activities of our Night Hawk Restaurant to maintain the highest standards of food and beverage quality, service and marketing to maximize profits through outstanding customer service.

Essential Responsibilities

  • Plan, direct, assign and delegate responsibility and authority for all functions of administration and planning of Night Hawk restaurant to meet the daily needs of the operation.

  • Maximize food and beverage department profitability; implement effective controls of food, beverage, and labor costs and monitor the restaurants’ budget to ensure efficient operations, including achieving budgeted revenue and labor expenses.

  • Monitor, develop and implement schedules for the operation of Night Hawk to achieve a profitable result.

  • Hire, train, supervise, develop, discipline, counsel, and evaluate restaurant supervisors and associates according to Hotel Kansas City’s policies and procedures.

  • Motivate and develop associates for future advancement.

  • Consistently train associates on newest product and service knowledge.

  • Regularly review and evaluate the degree of customer satisfaction of Night Hawk restaurant; recommend new marketing and/or operational policies and procedures when necessary to keep up with demand and market changes; investigate and resolve food quality and service complaints.

  • Consistently come up with product and service improvements as well as ways to generate new business.

  • Ensure compliance with all company policies and procedures relating to the restaurant, as well as local, state and federal laws and regulations; maintain cleanliness and proper sanitation of all work and service areas.

  • Control usage of all food and beverage items and appropriate usage of equipment, tools and service equipment.

  • Maintain thorough knowledge of all food and beverage items offered, including ingredients, methods of preparation and proper service. Expert knowledge of wine and spirits.

  • Observe daily conditions of all physical facilities and equipment in the restaurant/bar/lobby; make recommendations for corrections and improvements as needed.

  • Develop, implement and market new and creative menus to attract a pre-determined customer market; promote the cross-selling of other hotel outlets.

  • Participate in the development of the annual budget for Night Hawk restaurant; develop short and long term financial operating plans.

  • Attend mandatory meetings including divisional meetings, executive meetings, colleague meetings, etc.

  • Participate in Manager on Duty coverage program, which may require occasional weekend stayovers.

  • Participate in community public relations for Night Hawk restaurant and Hotel Kansas City.

  • Utilize traditional software programs such as Word, Excel, Publisher, PowerPoint and/or Outlook.

  • Develop proficiency working with Micros and Tock.

  • Keep work area clean and organized.

  • Demonstrate positive leadership characteristics which inspire colleagues to meet and exceed standards.

  • Demonstrate high degree of drive and initiative.

  • Ensure a safe working environment for all associates.

  • Maintain a good working relationship with other associates by fostering a harmonious work environment.

  • Communicate with other departments to ensure a supporting team of professionals.

  • Other tasks/duties as assigned by Food & Beverage Director, Night Hawk Beverage Director/General Manager or General Manager.

Qualifications:

Education:

  • High school diploma or GED equivalency.

  • 4 year college degree preferred.

  • Must obtain Kansas City Liquor License.

Experience:

  • At least 3 years in food and beverage restaurant management required.

  • Food Service Sanitation certification.

  • CPR Certified preferred.

  • Wine and cocktail knowledge preferred with a desire for continued learning.

  • Thorough knowledge of restaurant operations including food, beverage, supervisory aspects, service techniques, and guest interaction.

  • Considerable skill in math equations using percentages.

  • Ability to access and accurately input information using a moderately complex computer system.

Interaction:

  • Ability to communicate in English, both orally and in writing, with guests and colleagues, some of whom will require high levels of patience, tact, and diplomacy to defuse anger and to collect accurate information and to resolve problems.

  • Ability to work under pressure and deal with stressful situations during busy periods.

Work Environment

  • Ability to walk, stand, and/or bend continuously to perform essential job functions.

  • Ability to move up to 600lbs. with wheelchair assistance.

  • Ability to lift up to 75lbs. and to lift lighter objects overhead.

  • Ability to navigate varied floor surfaces.
