As a Restaurant Team Leader at Andaz London Liverpool Street, I am responsible successfully overseeing the running of both outlets during service periods. I share the daily responsibility Brasserie with the other Team Leaders and Outlet Manager as well as working alongside the staff in the kitchen; I head up the service side of the operation and have few other Team Leaders who share the responsibility. The team consists further of hostesses, waiter/waitresses, bartenders, commis waiters/waitresses and temporary staff. I am also charge of all their development and progression as it’s the people that make the experience for our guests and help create lasting memories.
My main area of responsibility is to run the Restaurant according to our brand standards which asks for an unscripted service, whereby everybody can add their individual touch and ‘personal style’ to the ambience and environment. I also contribute to the financial success of the operation which includes keeping to defined targets of revenue, cost and keeping a close eye on payroll; this includes rota preparation, managing periods of annual leave and ensuring we have the right people in the right place at the right time. I also ensure we keep to planned Guest Satisfaction targets as well as planning how the restaurant and lounge can improve in service levels and offering.
The most important skill is the ability to multitask as there is a busy operation to run while planning the staff and keeping watch over service levels and revenues. An eye for detail is also essential, as well as looking out for the newest trends and interpreting them in the Andaz way to include them in the operation. I need to be a great communicator to get the most out of my team while as we have a very diverse workforce made up of some talented individuals. As a team we strive to remain on top of our game as the City has evolved around us into a super-competitive environment both for hotels and restaurants.
There is a strong group of people around me with young and ambitious staff as well as experienced personnel who have worked with us for long periods of time. They all have great potential and it makes me happy to bring them together into a great team and achieve the results as a group. At Hyatt “we care for people so they can be their best” so I really take in interest in my team, their overall wellbeing and doing what I can to aid their development and make sure they reach their full potential. What I really enjoy is the sense of fun and care that runs through my department but also the hotel; there’s always so much happening that no two days are ever the same!
