Hyatt Sous Chef at Wild Dunes Island Resort in CHARLESTON, South Carolina


The Wild Dunes Resort team is looking for a talented Sous Chef to join our Coastal Provisions and Banquet Culinary Team!

Summary:The goal of the Sous Chef is to manage the kitchen and work with the culinary team to create, implement and maintain quality standards. In some instances, the Sous Chef will be expected to be responsible for the entire operation in the absence of the Executive Chef. The ideal Sous Chef will accomplish their tasks by monitoring the daily functions of the culinary department, including providing support and guidance to the culinary team, ending in a positive guest experience.

The Sous Chef shall always strive to provide exceptional service to both internal and external guests. S/he will be responsible for exemplifying the Wild Dunes Resort Culture as well as promoting Wild Dunes Resort as both the Destination and Employer of Choice!

Essential Job Functions:

  • Support senior leadership by developing and assuming basic management responsibilities

  • Assume the role of liaison between all departments within the culinary division and all other hotel departments

  • Supervise the preparation and cooking of various food items

  • Develop and implement creative menu items that adhere to Hyatt brand standards

  • Plan, coordinate & implement special events and holiday functions

  • Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring

  • May manage other key culinary leadership rolls including supervisor and other less senior Sous Chefs

  • Lead and coach the team towards achieving exceptional guest service and employee satisfaction results

  • Monitor food production, ordering, cost, and quality and consistency daily

  • Ensure proper safety and sanitation of all kitchen facilities and equipment

Experience & Education:

  • In-depth skills and knowledge ofall kitchen operations

  • Possess strong leadership,communication, organization and relationship skills

  • Experience with training, basicfinancial management and customer service

  • Proficient in general computerknowledge

  • A true desire to exceed guestexpectations in a fast-paced customer service environment

  • Capable of producing a consistentproduct in a timely manner

  • Strong training and communicationskills

  • Culinary education and/or on thejob training, hotel experience preferred

Job Requirements:

  • Must be authorized to work in theUnited States

  • Must be able to speak, write andunderstand English

  • Must have complete understandingof the fundamentals of the culinary operation

  • Must be able to accurately followinstructions, both verbally and written

Working Conditions:

  • Whileprimarily an indoor job, must be able to work at outdoor locations onoccasion, walking on uneven surfaces;

  • Must be able to work in either hotor cold conditions

  • Must be able to stand on feet andwalk throughout the day

  • Must be able to frequently liftand carry up to 25 lbs. & occasionally lift, carry, push & pull up to50 lbs.;

  • Must be able to perform simplegrasping, fine manipulation, reaching and repetitive hand & arm movementsconstantly; squeezing and overhead reaching occasionally

  • Must beable to twist and bend frequently, and squat occasionally
