1. Review the daily receiving report for all materials. 2. Review the daily store requisition for all materials. 3. Verify the purchase department is performing their duties according to hotel procedures. 4. Compute daily requisition and material transferred between the kitchen, Restaurant and bars, and then computes the food and beverage cost for kitchen, restaurant and bar, separately. Also prepare the Daily /Weekly Food & Beverage Cost Report. 5. Supervise the monthly physical inventory taking for the food, beverage, and general supplies and engineering materials and compute the inventory amounts for the physical inventory list. 6. Supervise the regular physical inventory taking for Hotel Operating Equipments and compute the inventory list, Calculation of loss and breakage report from retain service charge. 7. Prepare the Monthly Cost Controller Report. 8. Verify that receiving staffs is performing their duties according to hotel procedures and using good judgment in inspecting goods. 9. Verify the storeroom staffs are performing their duties according to hotel procedures and properly managing all goods stored. 10. Verify F & B cashiers are performing their duties according to hotel procedures. Verify that systems are adjusted when menu price changes. 11. Verify that kitchen and bar staff is providing a high standard of food preparation and service. 12. Perform analysis of the menus and compute standard food cost. 13. Compute and record costs in the standard recipe and standard drink recipe. Perform Butcher Test and have a grasp of spoiled or unusable ingredients. 14. Verify all storeroom keys are sufficiently safeguarded and no theft problems occur.
