Hyatt Hygiene Manager (차/부장급) in JEJU, South Korea

*As a Hygiene Manager at /Grand Hyatt Jeju/, you will have an opportunity to develop your skills within an inspired team and work under the supervision of the Executive Chef to ensure that the given task is carried out to perfection.

You will need to contribute in developing and implementing Food and Beverage hygiene service standards regarding the quality of product served & hygiene of the service staff associated.

You will have to conduct regular hygiene audit and works with the concerned heads of the departments to initiate corrective / preventive actions based on the same.

You will have to ensure to requisition all stocks required in the workplace such as laboratory instruments, culture media, chemical test indicators, chemicals for analysis tests, etc.

You will have to supervise periodic preventive pest control in all areas of the hotel.

You will periodically collect food samples from restaurants and buffets and test for microbial activity to ensure that consistently healthy and safe food is served to the guests.

You will conduct spot checks of kitchen surfaces, gymnasium equipment, guest room surfaces, staff uniforms, guest room linen, food handler skin swabs, etc. for any microbial activity.

You will coordinate with the Human Resources to ensure annual medical check-up is conducted for all food handlers. You will coordinate Single Entry System with Room Service, and Laundry.

The position will initially be based in Jeju City/Island, South Korea.

To be successful in this role, you will need to have: * * To ensure all aspects of the hygiene service are carried out and maintained to the required standard ( ISO 22000 ) * To manage the hygiene budget and ensure all expenditure is authorised and recorded * To manage the ordering and stock control of hygiene consumables and chemicals * To maintain detailed cleaning instructions and schedules for every hygiene activity that meet the requirements of the food safety standard * To conduct compliance audits / inspections of internal hygiene standards and documentation * To support the Technical & QA team in obtaining water samples for testing and participating in microbiological investigations or projects to drive improvements in the site hygiene standards * To provide training and awareness for all hygiene Food handlers staff in all procedures relevant to their role * Implementation of ISO 22000 * Bachelor’s degree in Occupational Health or any related field * Comprehensive understanding of Korean Hygiene and Governmental regulations related to food safety, retail food packaging regulation knowledge an advantage * Korean language required, understanding of English an advantage
