Hyatt Banquet Sous Chef in MIAMI, Florida


The Confidante Miami Beach is looking for a new Banquet Sous Chefresponsible for food quality and presentation within the banquet operation with support in the hotel outlets. The Confidante Miami Beachoffers nearly 30,000 square feet of dynamic event space with smart technology, lounge areas and mid-century modern details that entertain and inspire.

The ideal candidate will:

  • Review banquet EventOrders on a daily basis and make note of any changes

  • Ability to plan andexecute multiple banquet functions simultaneously

  • Ability to continuallyenhance the culinary experience of our attendees

  • Supervise foodpreparation, sanitation, and safety in the kitchen

  • Participate ininterviewing, training, scheduling, and motivation of culinary and stewardingstaff

  • Menu development in collaborationwith the Executive Chef, to include cost allocations, recipes and platepresentation guides

  • Requisition supplies and partnerwith Purchasing to maintain food inventory levels and budgeted food cost

  • Manage labor costs to budget

  • Attend designated meetings

  • Maintain equipment in good workingorder, submit regular service and repair requests

  • Partner with the front of thehouse to achieve departmental goals

  • Able to work flexible hours anddays, nights, weekends and all holidays

  • Knowledge of current and updatedculinary trends.

  • Minimum of three years’ experiencein a high-volume banquet kitchen and a minimum of two years’ experience asa Sous Chef

  • Other duties as assigned


  • In-depth skills and knowledge of all kitchen operations

  • Possess strong leadership, communication, organization and relationship skills

  • Experience with training, basic financial management and customer service

  • Proficient in general computer knowledge

  • A true desire to exceed guest expectations in a fast paced customer service environment

  • Capable of producing a consistent product in a timely manner

  • Strong training and communication skills

  • Culinary education and/or on the job training, hotel experience preferred

  • Geographic and schedule flexibility preferred

Hyatt develops Sous Chefs to progress into the role of Executive Sous Chef through the training of Banquets, Restaurants and Garde Manager. Sous Chefs report directly to the Executive Sous Chef and/or Executive Chef.
