The goal of the Culinary Manager is to work directly with and in the absence of the Executive Chef to maintain and improve the culinary operations. The ideal Culinary Manager will accomplish this by monitoring the daily functions of the culinary department, including providing support and guidance to the culinary team, ending in a positive guest experience.

Responsibilities include:
* Support senior leadership by developing and assuming key management responsibilities * Assume the role of liaison between all departments within the culinary division and all other hotel departments * Supervise departmental performance and provide them council * Manage hourly kitchen and stewarding employees through scheduling, payroll, training, coaching, evaluating and hiring * Lead and coach the team towards achieving exceptional guest service and employee satisfaction results * Monitor food production, ordering, cost, and quality and consistency on a daily basis ensuring financial performance and control * Ensure proper safety and sanitation of all kitchen facilities and equipment * Organize and facilitate departmental meetings, training and goals setting


Specific training, experience, and certifications required. (Items listed here will eliminate candidates in the recruitment and screening process who do not include these on their application):
-Must have and maintain a professional appearance for our luxury Hotel -Good listening and verbal communication -Must be a team player and enjoy working on and with teams -Autonomous and fast worker, must be able to work under pressure -Must have a minimum of 10 years cooking experience and 2 years at same level or luxury hotel -Must be passionate about food, creative and excellent technician, proficient in various style of cuisine -Outstanding sense of taste and food presentation -Strong technical skills and creativity -Banqueting, restaurant, baking experience required -Culinary degree and food handler certification required -Basic Math and computer skills -Proactive approach when interacting with guest, co-worker or vendor.

Specific training, experience, and certifications preferred, but not required:

-Experience with volume of covers demanded by banquet operation, fine dining restaurant -Knowledge of food allergens and special dietary needs of guests -Experience implementing new food concepts and menus -Birschstreet, kronos knowledge -Union labor relation knowledge
