Hyatt Executive Chef in STOWE, Vermont

Job Overview

The Executive Chef will be responsible for campus wide kitchen operations including hotel outlets, ancillary outlets, banquets, the Club at Spruce Peak and the Stowe Country Club with direct oversight of menu planning, provisioning, food preparation, and sanitation. This position directs the training of culinary staff, including seasonal international workers, and other kitchen workers engaged in preparing and cooking foods to ensure an efficient and profitable food service. The position demands creativity on a daily basis, excellent communication skills, and the ability to maintain the highest of culinary standards. The Executive Chef works well under pressure, is organized, flexible, self-motivated and is willing to work long hours. He or she is able to move seamlessly between culinary endeavors, business management and interfacing with Club members and guests.

Essential Functions: * Develops annual business plan and objectives for all key business units * Works collaboratively with the Director of Food & Beverage to run a world-class operation that exceeds the expectations of guests, members and owners * Ability to instill safety and sanitation habits in all employees, making these the highest priority within the culinary operations * Instills a culture of training and development within culinary leadership that results in the ability to successfully onboard and train seasonal staff and to ensure their progressive development, has a passion for teaching and working directly with staff * Collaborates closely with the Director of Purchasing on effective and efficient procurement, requisitioning and inventory control procedures * Organize and direct all kitchen activities towards attainment of resort and company objectives and operational goals, manage all financial aspects of sales & marketing efforts * Menu development for all outlets * Develop, implement and evaluate short and long-term tactics and programs focused on customer and market needs/conditions in order to ensure the best possible dining experience * Interface with members, guests and owners to build relationships that grow the reputation of the Spruce Peak brand and the Food & Beverage department * Provide regular, objective and detailed feedback to each executive committee member in order to maintain an environment of continuous improvement * Develop and maintain strong partnerships with local producers and suppliers * Constantly explore new products and services; stay abreast of the latest in culinary trends that are applicable to our guest and member demographics * Foster a cooperative work environment, which focuses on trusting relationships, maximum productivity and associate morale * Other duties and requirements commensurate with leadership and managerial positions within the company 1. 2.

Qualifications:
* College graduate, culinary degree or equivalent industry experience * Experience as an Executive Chef; preferably in a complex resort environment * Strong written / verbal communication skills, presentation skills and the ability to utilize them effectively with guests, peers and associates * Ability to work under stressful conditions and balance multiple commitments simultaneously * Strong customer service aptitude * Understanding of budgetary and fiscal responsibility within the department * Ability to prioritize and organize work assignments; delegate responsibilities effectively * Ability to lead and direct performance of departmental associates and follow through with corrections where needed * Be able to analyze and resolve problems while exercising good judgment and maintaining the best interest of the company * Ability to effectively motivate department associates and maintain a cohesive team while working effectively across departments to achieve company objectives
