Hyatt Sushi Chef in STOWE, Vermont


Job Overview:

Fishing for a fresh opportunity? We are looking for an experienced Sushi Chef who thrives in an exciting, fast-paced environment! The Sushi Chef is responsible for filleting fish and preparing sushi in the most safe and sanitary manner possible. The Sushi Chef is also expected to interact with guests, when possible, in order to enhance their dining experience.

Essential Functions:

  • Prepares Sushi and other dishes as needed to Spruce Peak Standards

  • Orders all supplies from various vendors and in some cases going directly to the growers for the freshest possible products

  • Ensures all cuisine served to guests follow established guidelines for quantity, quality, appearance, and palatability

  • Supervises and coordinates the production of food according to menu specifications

  • Performs testing and evaluation of new recipes. Inspects quality of food products used to prepare cuisine and informs Executive Chef when quality is not acceptable

  • Maintains sanitation and cleanliness standards in the kitchen area that meet or exceed the state and local Health Board inspection and Spruce Peak requirements

  • Acknowledges any special requests and prepares the menu item accordingly

  • Communicates effectively with the Kitchen Staff and the Stewarding Team

  • Orients employees to the department and resort and provides on-the-job training on job responsibilities

  • Upholds all safety standards of Spruce Peak

* College degree and Culinary degree or ACF certification preferred

  • 3-5 years cooking experience in a fine dining restaurant

  • Ability to handle food, objects, products and utensils

  • Ability to bend, stoop and kneel

  • Pleasant and attentive personality

  • Experience in high volume establishments

  • Excellent communication skills

  • Technical proficiency (computer applications)

  • Attention to detail

  • Strong organizational and time management discipline

  • Operate effectively in stressful situations

  • Ability to adapt to changing guest needs
