Hyatt Executive Pastry Chef in TOKYO, Japan


Park Hyatt Tokyo is looking for a passionate Executive Pastry Chef who is able to lead and work together with their team to ensure a creative, energetic and motivating environment in the kitchen.

The Executive Pastry Chef will oversee the running of the Pastry kitchens, supporting the senior chefs with daily management, pastry and bakery preparation, ensuring maximum quality and profitability. This includes supervision, training, development and coordination of the kitchen brigade as well as effective communication and liaison with other departments.

Main Responsibilities

  • Ensuring a high level of consistency of plated desserts throughout the hotel. Fully responsible for the Pastry Boutique’s layout and performance

  • Analyzing food costs and determine most cost-effective recipes while maintaining quality.

  • Maintaining departmental budget within established guidelines.

  • Responsible for the production charts of all the bakery and pastry items and monitor them from time to time.

  • Ensure to exceed guest expectations in quality and service of the food products for all outlets and the pastry boutique.

  • Supervise the preparation and production of all bakery products.

  • Follows all HACCP procedures and clear records are maintained at all the times.

  • Develop staff to ensure smooth functioning of the department and promote teamwork.

  • Planning and design of menus, responsible for presentation of pastries, bakery items and chocolates.

  • Follows guidelines laid by the Executive Chef and Outlet Chefs on menu plan and design.


Ideally with an apprenticeship or professional diploma in Pastry and Bakery production with chocolate and/or sugar specialization.

Minimum 10 year’s work experience as Pastry Chef in a luxury hotel and possibly exposed to a Michelin Starred experience.

Good practical, operational and adequate administrative skills with a flair for creativity are a must.
